DIY Granola Bowls With Homemade Coconut Granola

Homemade granola is one of our family’s go-tos—a pantry staple we’d be lost without most mornings. It makes a wonderful breakfast—by itself, with milk or stirred into yogurt, and it doubles as a nutritious, kid-friendly snack with crunch.
When friends or family are in town, the DIY granola bowl is an easy crowd-pleaser, too. All you need is a big bowl of homemade granola, two or three tubs of yogurt, a handful of different toppings, and some bowls and spoons and guests can create their own breakfast granola bowl. With dozens of different topping combinations possible, there’s something for everyone. The DIY granola bowls are one of my favorite big-group breakfasts because they require minimal prep and cleanup.
Homemade Coconut Granola
INGREDIENTS
- 3 cups old-fashioned oats
- 1 cup unsweetened coconut flakes (large flakes are best)
- ¾ cup slivered raw almonds
- ¾ cup raw pecan halves
- 1½ teaspoons ground cinnamon
- generous ¼ teaspoon kosher salt
- ¼ cup coconut oil, melted
- ⅓ cup maple syrup
- 2 tablespoons honey
DIRECTIONS
Preheat oven to 300 F.
Combine all ingredients in a large mixing bowl and stir well until all ingredients are incorporated.
Press oat mixture into a thin, even layer on a large baking sheet (or 2 if you have smaller pans) and bake 25 to 30 minutes, turning pan around halfway through for even baking. For chunkier granola, don’t stir during baking—wait until it has cooled. Granola is done when it is a warm, golden brown and fragrant.
Let cool completely before enjoying, and store extra granola in an airtight container.
